Came out very pretty. It's dense and sweet like a good fruit cake or a crunch cake. I made it in a bunt pan and the top/ bottom has a nice burnt sugar crunch.This is actually too sweet for my taste but it's not a bad cake and I know some of you will like it. I think I'll call neon cake as I had really bright carrots and wonderful fresh eggs that combined to make a very colorful yellow-orange cake.
The carrot marmalade was easy to make and yummy on it's own.
What I did
Maralade
6 to 8 large carrots
1 lemon
2/3 of a cup sugar
The night before in med bowl add 2 cups grated carrots,the zest and juice of the lemon, and the sugar. Let sit fridge overnight.
Heat mixture on low until sugar melts and carrots soften. Take your time or it will burn. At this point because I was making the cake I melted in a stick and a half of butter [yes it's bad] let that cool.
Beat three eggs add those to the mixture and then I sifted in butter pound cake mix. Pre heat the oven to 350 greased & floured a bunt pan and baked for about 45 mins.
Cook's notes:
Next time I plan to try the dry ingredients of pound cake sans sugar instead of the cake mix.I also think replacing a table spoon or so of the sugar in the marmalade with a good honey would make it even better.
I won the egg lottery this time. I don't think I've ever gotten then this nice from a store. We used to raise chickens so I know a fresh egg when I see it.
