2009 has to an improvement. I'm not doing anything but I never bother with New Years. I did make something for dinner that turned out pretty good just by throwing together what I had on hand. I going to post it so I remember how I did it.
Mexican
Roasted Corn & Tomato Soup
I can whole tomatoes
1small package frozen corn
1small onion
olive oil
1 can black beans
chile powder
chipolte chile powder
clilantro
Heat oven to 400 f
Drain tomatoesnd reserve juice.
Drain and rinse beans.
Put corn tomatoes and diced onion in pan with two Tbs of olive oil. Roast until the the onions are soft and start carmelize and tomatoes are deep red. [I cooked it all in my big oven proof fry pan so I didn't dirty two pots.] Deglaze pan with juice and about a cup of water. Blend until Tomatoes are creamy and there's some corn left whole. Add beans and seasoning and simmer on stove till warmed.
