1 1/4 cups AP flour
1cup yellow cornmeal
1 teaspoon ground ginger
Pinch of salt
1/2 cup unsalted butter melted [originally called for a cup of butter but I didn't have it so I added oil. Worked fine.]
1/2 veg oil
3/4 cup sugar
1/4 cup of honey [originally just a cup of sugar but I had honey and it goes so well with the ginger and orange zest.]
1/4 cup of finely grated orange zest [called for lemon and again I didn't have it.]
2 large egg yolks
1. Whisk flour, cornmeal, salt and ginger together.
2. Whisk cooled melted butter, oil, sugar, honey, egg yolk and zest well. Stir in the flour mixture.
3.It called for you to butter the cook sheet but I forgot and mine didn't need it. Roll into tablespoon sized balls and place and inch apart on sheet. Flaten a little with the bottom of a glass to about 1/4 an inch thick.
4. Bake at 400 f for about 8 to 10 min. Until edges start to brown.
Notes: It was supposed to make 6 dozen cookies but I only got half that as usual. I will make them the same again though, because they came out very nice. Rich shortbread with like zing to it. Might be good with finely chopped candied ginger instead of power. Came together easy a half hour from first step to cleanup. :)
